Maria Empanada’s Latest Location Landing on Colfax

Popular Argentinian fast-casual restaurant Maria Empanada is on track to open its latest location. The business has a new eatery coming to 2730 E. Colfax Ave., right across from East High School, according to an article by the Denver Post. 

There were hurdles with the pandemic and with the permitting process that have held up the project. But following a lengthy construction delay, the concept is finally getting closer to welcoming customers. 

It is taking shape in a 500-square-foot space with counter seating and a large patio. The renovation project to transform the property, which used to house Little Beast Street Food, costs a total of $600,000.

The East Colfax site will serve both sweet and savory empanadas, along with alfajores—traditional Argentine cookies filled with dulce de leche and chocolate mousse. Maria Empanada plans to introduce seven variations of these cookies, which have already gained popularity in its other locations.

With existing spots on Platte Street, South Broadway, and inside Stanley Marketplace in Aurora, and a new restaurant planned for Denver International Airport, the business has boomed in recent years. Maria Empanada initially launched in 2011, founded by Lorena Cantarovici, who moved to the United States in the early 2000s.
