Olive & Finch to Open Union Station Outpost 

The concept is coming early 2025.

Chef Mary Nguyen’s highly regarded “fine-casual” concept Olive & Finch is set to open a new location in Denver Union Station, a recent press release states. The restaurant will occupy the space previously held by Snooze A.M. Eatery, which is relocating within the travel hub.

With a projected debut in early 2025, the new Olive & Finch will offer a mix of grab-and-go options and sit-down dining.  Patrons can look forward to a range of fresh-baked pastries, cold-pressed juices, gourmet sandwiches, and vibrant salads, as well as a comprehensive craft coffee program.

This new addition will join Olive & Finch’s existing Uptown and Cherry Creek locations, as well as Little Finch on the 16th Street Mall. Nguyen is also working on another forthcoming Olive & Finch location at the Denver Performing Arts Center.

The move comes as Snooze A.M. Eatery prepares to vacate its current shell in September, to a space at Union Station that is double the size. The train terminal recently underwent extensive renovations and upgrades.
