Chicken Salad Chick continues to build its Colorado footprint, with a couple of metro locations in development. According to the franchisee for the area, plans for a Parker store will be the next project to focus on. While there has not been a location locked down yet, it’s confirmed that the city is on the list of targeted towns.
“Parker will happen, we just need to find a site that isn’t crazy expensive!” franchise owner Maureen McFerson, a multi-unit operator, told customers who have been asking about her next steps for expansion.
McFerson and her husband opened a location in Littleton last year, and they are now ready to start scaling their operations. A DTC shop will open in the spring (What Now Denver coverage), and a Castle Rock store is in the works as well, but a timeline for that is unknown.
Colorado currently has seven Chicken Salad Chickens. A Southern fast-casual concept that hails from Alabama, the chain has grown to 300-plus restaurants across 22 states over the last 17 years. Its menu features over a dozen rotating chicken salad flavors, along with sandwiches, soups, sides, and desserts.
