Property Chosen for Castle Rock Chicken Salad Chick

Chicken Salad Chick, the popular Southern-style fast casual chain, is officially confirmed for a new location in The Meadows neighborhood of Castle Rock. According to neighborhood forums, the company is building near the Orange Theory, but an address has not been disclosed yet.

While the brand has teased its intent to enter the area for a while, the franchisee finally confirmed that a Castle Rock restaurant is 100% happening, with a lease executed and building plans formed. However, operator Maureen McFerson told What Now Denver she is not sure when it will open.

The franchisee, who owns a store in Littleton and is opening one next spring in DTC, plans to expand to a handful in the metro area. Parker is also on the list for future developments, she said on Instagram.

With more than 300 locations across 22 states. It’s known for its dozen-plus flavors of chicken salad, along with sandwiches, sides, soups, and desserts — all made from scratch daily.
