A former 1950s-era motor inn is getting a second life, being converted into a 54-room boutique hotel with a restaurant and wine garden on site. According to KDVR, the property and eatery, called Fino, will debut in the spring at 3015 E. Colfax Ave.
Fino, with a Mediterranean coast-inspired menu, will center on seasonally driven shared plates and an evolving wine program. Its indoor-outdoor layout lends to European al fresco dining. At the helm of the eatery is Steven Waters, owner of Take Care Brands Hospitality, Soigné Holdings hospitality development and consulting firm, and popular local spot Run for the Roses.
“For the last 2.5 years, I’ve been (somewhat) quietly working on a project in Denver that is getting closer and closer to sharing each day,” he posted. “We’ve got an incredible team building the next iteration of 3015 East Colfax, and I cannot wait to share it with everyone in just a couple of short months.”
Developer Brian Toerber has committed $22 million to the redevelopment of the site, positioning the project as both a preservation effort and a reinvestment in the community, Boutique Hotelier writes.
Recent updates include a liquor license hearing in October for GOLD ROOM F&B LLC (the entity behind Fino), but there are no updates on the resolution of that meeting. Construction updates shared on social media indicate steady progress, describing the project as entering its “final stretch” and promising forthcoming details on the grand opening.
