Roots Restaurant Relocating to Downtown Longmont

The fusion eatery will have a new home in a busy part of town.

The owners of Roots, a multicultural eatery that has been operating in Broomfield since 2020, announced recently that the business will be moving north to Longmont. Changes are underway at the famous Dickens Opera House — located at 300 Main St. — to get the property ready for restaurant operations. 

Vipul Seth, who owns the business with his wife Madhoo, told What Now Denver that there is “a lot going in in terms of cleaning, flooring, signage, paint, décor, furniture, lighting, and sound” at the new address. The property is more than 140 years old and is on the National Register of Historic Places. 

They are working on finalizing the menu this week and are waiting on licensing. At the Broomfield location, which closed for dine-in service in early April, the menu featured healthy and eclectic bites using local ingredients.

In a social media post this week, Roots announced that they are hiring for a number of positions, both in the kitchen and dining room. The business values paying workers a fair living wage.

  • Yes! We need more upscale, non-chain restaurants in Longmont. The demographic has changed significantly in the last 10 years and our foodie tastes have not been satisfied locally since the pandemic. I miss Samples and some of the other unique local places.

  • Alright, now we Longmonters, will have a Roots and a Roost restaurant within a block of each other in town. Hope we don’t get cornfused…
