Freshly baked pastries and fresh-brewed coffee are soon to grace Longmont as Spruce Confections prepares to open another location of its venture Spruce Cafe. To be located at 600 S. Airport Road, this Longmont location marks a significant expansion for the Boulder-based bakery.

The new Spruce Cafe will offer the brand’s beloved pastries, cupcakes, scones, croissants, cakes, cookies, soups, and sandwiches. Every menu item the company has is meticulously handcrafted using the finest ingredients to ensure quality and freshness.

It will take up tenancy in the former Que’s Espresso space. Approval from the Health Department is pending, and the business hopes to open this summer.  There are also Spruce Cafe locations in North Boulder and on the CU campus, and Spruce Confections has spaces on Pearl St. and in Uptown.

Founded in 1992 by David Cohen, Spruce Confections has been a staple in the local community for its artisanal treats and cozy coffeehouse ambiance. It began as a home business funded with less than $100 and has grown into a company that will now have five Front Range establishments.
