Sushi Box Owner Opening New Restaurant Concept

Downtown Loveland is gaining a new sushi burrito restaurant in 2022.

The owner behind Sushi Box in Longmont and five Thai Kitchen locations across the state of Colorado is opening a new restaurant concept—Sushirito. The new restaurant in downtown Loveland will offer sushi burritos, as well as other Asian-inspired dishes.

Sushirito owner Patcharin Nilabon told What Now Denver that they began selling sushi burritos at Sushi Box, and they were a hit. “It’s more convenient to eat,” Nilabon said. “They try it, they like it.”

A sushi burrito is basically an oversized sushi roll wrapped in a full seaweed sheet. “We put some rice in there, and there will be my special sauce in there. And the customer, they can choose whatever they want,” Nilabon explained.

Options include spicy salmon, crab meat, cucumber, spring mix, unagi, and more. They’ll wrap it up in the seaweed and cut it in half for more convenient consumption. Sushirito will offer a large menu featuring others items such as Chirashi bowls, traditional sushi rolls, Poke bowls, and teriyaki bowls.

Nilabon hopes to open the new location sometime in January, but the opening date depends on the health department. Sushirito will feature some new equipment and décor in the space at 532 N. Lincoln Ave., Loveland, CO 80537.

Nilabon decided to open an Asian restaurant in Loveland to add more variety of cuisines for diners. Sushirito will also feature a bar. “They can sit down and have a couple of drinks. We’re going to stay open late, too,” Nilabon said.
