The Greenwich, the acclaimed RiNo Italian restaurant at 3258 Larimer Street, will shift ownership at the end of the year, the business announced this week. Founder Delores Tronco is moving back to NYC and passing the baton to Drew Davis, who came to Colorado from the Big Apple.
“I’m passing the keys and the title to someone who will honor the little corner of the world I built while healing from the loss of my NYC restaurant, The Banty Rooster,” she shared, confirming that December 31 will be her final day as owner.
Tronco started her career in Denver, co-founding Work & Class, before moving to New York and opening an eatery there, Westword reports. It unfortunately became a casualty of COVID, and she subsequently moved back to Denver, opening The Greenwich in 2021.
Incoming owner Drew Davis grew up in New York and built his career in respected kitchens like Momofuku, The Alinea Group, and BL Gruppo, and worked as COO of a Chicago quick-service brand. He moved to Colorado and became familiar with The Greenwich and its team, working with them a few times, but then spent the most recent years in another industry.
However, when the opportunity arose for ownership of the venue, he says it “was incredibly serendipitous. I couldn’t ignore how much my heart wanted to be back in food and hospitality. This really does feel like coming home.”
Davis says the restaurant will close briefly for the transition and some administrative adjustments from New Year’s Day through January 5. It will then reopen on January 6, continuing to offer its Italian-inspired menu and neighborhood-driven hospitality.
