Thirsty Lion Gastropub is bringing its scratch-kitchen menu, cocktails and lively dining-room atmosphere to Lone Tree, with a new restaurant planned for Park Meadows.
The Arizona-based gastropub is preparing to open at 8335 Park Meadows Center Drive, taking over the space formerly occupied by Earls Kitchen + Bar. The new restaurant will span approximately 7,900 square feet, with an opening planned for December 2026, according to the Denver Business Journal.
Thirsty Lion currently operates one Colorado restaurant at Denver’s Union Station, where it has been serving lunch, dinner and weekend brunch. The Lone Tree restaurant will give the brand a second Colorado location and expand its presence into the southern Denver metro area.
The company describes Thirsty Lion as a scratch kitchen and gastropub, with a menu that covers everything from burgers and sandwiches to salads, bowls, pizzas and entrées.
Among the restaurant’s menu options are its signature burgers, chicken dishes, fish and chips, mac and cheese, tacos and shareable appetizers. The bar program features craft cocktails, beer and wine, with the company highlighting fresh ingredients, premium spirits and house-made juices and purées.
Brunch is also part of the Thirsty Lion experience. The restaurant serves brunch on Saturdays and Sundays from 10 a.m. to 2 p.m., with a selection of breakfast-inspired dishes and cocktails.
The gastropub also puts an emphasis on happy hour, currently offering daily specials on select pints, cocktails, wine and food. Its restaurants are designed to accommodate everything from casual meals to larger group gatherings and events.
The new Park Meadows restaurant is part of a broader Colorado expansion for Thirsty Lion. The Denver Business Journal reported that the company is also looking at additional sites in the Denver area as it grows beyond its Union Station location.
For Park Meadows, the restaurant will add another full-service dining option to the Lone Tree shopping destination, which already draws visitors from across the south metro area.
Thirsty Lion’s own website currently lists the Park Meadows restaurant as ‘Opening Late 2026’ at 8335 Park Meadows Center Drive. The new Lone Tree location is expected to open in December 2026.
