Building Permit Issued for New Broken Yolk Cafe in Peccole Ranch Area

It would be the valley’s fifth Broken Yolk

Founded in San Diego all the way back in 1979, Broken Yolk Cafe has undergone a growth spurt in recent years, transforming itself into a brunch franchise with 40 locations nationwide (and, adds the brand’s website, another 10 in development).

Brought to Las Vegas by Scale X 3, Broken Yolk’s largest franchise group, the chain has already grown to include 4 locations in the valley, including Henderson, Downtown Las Vegas, Town Square Las Vegas, and the southwest area.

Now, the Vegas appears to be getting a fifth Broken Yolk, as a building permit was issued in August for a new location at 9480 W Sahara Ave.

The location in question is part of a large retail center and was formerly occupied by an IHOP. Opening there, Broken Yolk Cafe would join restaurants like Viva Mercado’s Mexican Bar & Grill, Burgundy French Bakery Cafe Bistro, and El Pollo Loco.

What Now reached out Scale X 3 co-founder Randy Corrigan on Friday to inquire about plans for a new Broken Yolk in the former IHOP. Corrigan was not immediately available for comment.
