It was a sad day for local Italian cooking (and eating) when Chef Marc’s Trattoria closed its doors, a casualty of the difficult COVID-19 pandemic years. Chef Marc Sgrizzi, the culinary force behind Chef Marc’s, has been at work on several projects since the trattoria closed its doors, and now he’s preparing to make a comeback with Marc’s Ristorante & Bar, which is working to open before the end of the year at 9250 S Rainbow Blvd. #130.

“Its not going to be like your regular Italian restaurant,” Sgrizzi told What Now on Tuesday. “Everything is homemade, we use only Jidori chicken and Oishii shrimp, and we’ll be aging our own meat and making our own pancetta.”

Showmanship is built into the restaurant, whose space comprises 5,000 square feet with seating for 120 guests in its dining room, lounge, and centerpiece bar. Marc’s Ristorante & Bar will feature an Italian market, a dry-aging room in which guests can watch the aging process for the restaurant’s steaks, and house-made pastries and gelato.

“When you walk into the restaurant, you’ll walk into the market area where we’ll be making homemade gelato, which we’ll serve in a brioche bun,” said the chef. “There will be Italian pastry made right there, with Italian breads and desserts, and there will also be a savory area where you can buy Sunday sauce, bolognese, and other sauces to take home.”

Marc’s Ristorante & Bar will offer a revolving menu of dishes from regions like Rome and the Amalfi Coast, featuring home-made pasta, steaks dry-aged in-house, and fresh seafood, plus bone broth from grass-fed beef and other high-quality, health-conscious ingredients.

The restaurant will also feature an important carryover from Chef Marc’s Trattoria: two chef’s tables, where guests can enjoy an 8-10 course tasting menu.
