Eli’s Mini Pancakes and More is embarking on sweetening up the Fantastic Indoor Swap Meet with the debut of their first brick-and-mortar location. According to a City of Las Vegas permit, Eli’s Mini Pancakes and More is anticipated to open at 1717 S Decatur Blvd.
“I wanted to open a permanent location for my business so my customers can consistently find us and continue to enjoy our Mini pancakes,” Eli’s Mini Pancakes and More owner, Christina Alvarez Lopez, said in an interview via email with What Now Las Vegas.
“I selected the Indoor Fantastic Swapmeet as my location because of its long-standing presence in
Las Vegas. It’s a popular shopping destination, making it an ideal spot for customers to also enjoy my mini pancakes.”
And Eli’s Mini Pancakes and More is all about the pancakes. The brand offers fluffy pancakes, customized with a variety of fresh fruit and different toppings.
“Perfect for satisfying any sweet craving,” Lopez said.
“Some highlights from our menu include our unique and flavorful topping combinations, such as our Strawberry Shortcake Crunch Minis, topped with fresh strawberries and whipped cream, and our Churro Dream Minis, dusted with cinnamon and sugar and finished with caramel and whipped cream.”
For Lopez, this is a passion project covered in sweetness. Eli’s Mini Pancakes and More started as a catering service and food stand. Offering her sweet treats throughout the Valley, Lopez has managed to turn her satisfyingly delicious eats into a booming brand.
“I would love for readers to know that this business is built with passion, dedication, and a genuine love for serving the community. Every order is made with care, and we truly appreciate the support from everyone who chooses to visit us,” Lopez said.
“My goal is to bring a positive experience to the community by offering great customer service and a great quality sweet treat that the whole family can enjoy together.”
