Local Rotisserie Brand Karved to Open New Outpost at The Gramercy

Karved joins a restaurant lineup that includes Anima, DW Bistro, and Pinches Tacos

Located near the intersection of South Maryland Parkway and East Flamingo Road, Karved serves up a selection of rotisserie-based comfort foods. Coming out of the uncertainty of the pandemic years, the brand is preparing to expand its footprint in the Las Vegas Valley, beginning with a new location at The Gramercy Las Vegas.

“We’ve wanted to open a location for a long time, since my parents opened the first one,” Meghan Sparks, co-owner of the Gramercy location with her husband Andy Sparks, told What Now on Wednesday. The original location was founded by Joe and Elise Garson, who Sparks says will be involved in the Sparks’ outposts of the family business. “It has a great following.”

Visitors and residents at The Gramercy will be able to enjoy Karved’s proven menu of protein-forward comfort foods. These include the ¼ Roasted Chicken Plate and the Beef Tri-Tip Plate, both of which are served with rice or mixed greens plus choice of two sides from a selection that includes Mac N Cheese, Rotisserie Potatoes, and Yams.

Karved also excels in its sandwiches, with offerings like the Porchetta Sandwich (Free-range pork loin wrapped in crispy pork belly served in the Italian tradition with lemon caper sauce, gremolata, and arugula on a baguette) and the Karved Chicken Pita (Roasted Free-Range chicken served with tomato, red pickled onion, hummus, arugula and creamy herb dressing).

Sparks says Karved at The Gramercy will also offer a breakfast menu, allowing Gramercy residents to start their day there. The rotisserie brand will be joining a culinary community that includes Anima, DW Bistro, and Pinches Taco.

“We decided to open closer to our side of town, which happens to the southwest area,” said Sparks, adding that the couple intends to expand with further Karved locations in the future.
