Project Pollo Bringing Plant-Based Chicken Sandwich to Vegas

The chicken sandwich craze continues, this time for plant-based diners

Famous for being rejected for a Shark Tank deal, supposedly because of a too-high valuation, plant-based chicken sandwich chain Project Pollo is setting out to make its mark on the chicken space anyway.

The restaurant is already undergoing major expansion, with twenty restaurants currently operating in Texas, plus one each headed to Arizona and Colorado, and the branded is expected to grow even faster once it starts franchising next year. The first Las Vegas location is planned for 3154 W Sahara Ave., according to recent coverage in the Las Vegas Review-Journal.

The Project Pollo menu centers “Chikn” in forms like the Original Project sandwich, the Spicy Buffalo Chikn sandwich, and the Nashville Hot Chikn sandwich. It also features two burgers: the Backyard Burger and the Hart Breaker with cheddar, “birdy sauce,” fried onion strings and chipotle raspberry BBQ sauce. A Grilled Chikn Caesar Wrap is also available for guests watching their calories.

The location on Sahara sits opposite a Dutch Bros Coffee, near a Restaurante Mi Ranchito and a Denny’s. Project Pollo is expected to open there this fall.
