Sourdough & Co. is embarking on its fourth Las Vegas Valley opening. According to a City of Las Vegas permit, the new Sourdough and Co. eatery is expected to open in Spring Valley within the Rainbow Plaza at 827 S Rainbow Blvd.
Franchisee Daljeet Sodhi confirmed the opening and shared that the fast-casual soup, salad, and sandwich concept will likely open its next Las Vegas location before the end of summer. Unfortunately, Sohdi was unable to share further details by the time of this publication.

The brand was founded by Steve Presson and Gordon Ross in Greater Sacramento, California, in 2014. The booming eatery transitioned to a formal franchising model in 2022 and expanded rapidly across western and midwestern states. There are now roughly 92 open Sourdough and Co locations across several states, with a strong cluster in California and Nevada.
While this will be the fourth opening for the brand in the Las Vegas Valley, this will be the fifth opening in the state, as Sourdough and Co is also working on an opening in the Sparks/Reno area.
