Bruxie is opening a corporate-owned branch at 2171 Rosecrans Avenue in El Segundo.

The waffle-sandwich store will inhabit the former Pier 76 Fish Grill space at the Apollo Landing development, a 13,500-square-foot property that houses five casual dining options on the Rosecrans Corridor.

Bruxie El Segundo — the company’s seventh store — will join the likes of Shake Shack, Tender Greens, Philz Coffee, Randy’s Donuts, and Calo’ Kitchen + Tequila.

Bruxie is well-known for its enticing spin on the patterned breakfast classic. Instead of merely dolloping on two scoops of butter and some syrup, the mostly SoCal-based eatery opts to fold them in half and stuff them with savory goodness like fried chicken and pastrami with Cider Slaw.

The menu also offers loaded waffle fries or tots; big, filling salads featuring crispy or grilled chicken; an array of sandwiches ranging from NY deli style to artisanal; chicken and waffle plates; sweet sandwiches; and custards and shakes.

Bruxie CEO Scott Grinstead tells What Now Los Angeles the incoming outpost will open this summer.
