Étienne Nadeau, the chef behind Ambre and Saison — both of which gained recognition on the 2026 Michelin Guide — has a new restaurant slated to open this fall. Mano will open at 11 Boulevard René-Lévesque O in Québec. 

The restaurant is expected to open in September, according to the brand’s Instagram page.

Mano’s menu will center around fresh pasta, including dishes such as spaghetti bolognese. Further details regarding the menu and design remain largely unknown. What Now Montreal has reached out to the team for additional details.

Ambre has been open since 2022, and Nadeau opened tasting-menu restaurant Saison in summer 2025.
