West Village Italian restaurant Barbuto is heading to Brooklyn at 1 Hotel Brooklyn Bridge at 60 Furman Street, with plans to open this summer, according to its Instagram page.
“Barbuto is heading across the East River. Carrying on the spirit of the original West Village location, Barbuto Brooklyn brings James Beard Award-winning Chef Jonathan Waxman’s signature California-Italian cuisine to a whole new neighborhood,” the 1 Hotels website states. “The menu will feature beloved classics such as the JW Chicken with Salsa Verde, Kale Salad and JW Gnocchi alongside simple and seasonal dishes inspired by the waterfront. We look forward to welcoming you soon.”
Barbuto opened as a neighborhood restaurant in West Village in 2004. After a 15-year run, it closed, but reopened again in 2021. The restaurant serves dishes like Insalata Di Cavolo, a salad with kale, pecorino, breadcrumb and anchovy vinaigrette; Pizza Rampa, a pizza with wild foraged ramps, broccoli di ciccio and whipped ricotta; JW Gnocchi, with taranome, fiddlehead, salinas asparagus and spring garlic pesto; and Manzo, with skirt steak, pomme pavé, radicchio and sauce bordelaise.
Chef Jonathan Waxman is behind the concept. A California native, Waxman received a Grand Diplôme from La Varenne Cooking School in Paris and then got his start on the culinary scene in California. He launched his New York career in 1984 with his first restaurant Jams.
Currently, Waxman owns Barbuto, as well as Bar Tizio, a wine bar located next door to Barbuto in West Village, and Jams at 1 Hotel Central Park. He is also a partner in Park Tavern On Washington Square in San Francisco.
