James Hurst and Hayden Tobin are working toward opening a new concept, Cafe La Rosa, at 47 Monroe Street.

The restaurant will serve Mexican Sonoran cuisine, focusing on tacos and burritos. The proposed menu indicates that they will serve all-day breakfast tacos and burritos with options like gabacho (eggs, bacon, tots, cheddar and salsa), jefe (eggs, refried beans, housemade chorizo, cheddar, cotija and salsa verde) and vaquero (grilled steak, eggs, pinto beans, cheddar, cotija and salsa verde). There will also be all-day burritos such as chile relleno and bean and cheese burritos. The drink menu will offer items like coffee beverages, horchata and margaritas.

The spot will serve flour tortillas, all made in-house.

It is expected to have 11 indoor tables that will seat 22 people and one bar. The proposed hours of operation are 12 p.m. to 2 a.m. daily, with an outdoor area that will be open from 12 p.m. to 10 p.m. daily.

Hurst and Tobin also own The York, which opened in 2023. That spot serves comfort food like burgers, chicken sandwiches and grilled cheese.

As of now, an opening timeline for Cafe La Rosa remains unclear.
