Fish Cheeks Team Looking To Open Cocktail Bar in Nolita

Chacha’s will join the team’s growing portfolio of local brands.

The team behind local hits like Thai restaurant Fish Cheeks and Bangkok Supper Club have a new concept in the works. Jennifer Saesue and Chat Suansilphong are looking to open cocktail bar Chacha’s in a 2,092-square-foot space at 32 Spring Street in Nolita, according to community board filings.

Plans for the space call for 15 tables with a total of 55 seats and two bars that will seat 16. The space also features a 370-square-foot backyard that will provide space for an additional 10 seats.

The menu will focus on creative cocktails and light bites. The proposed food menu includes items like beef tartare, smoked trout salad, red curry corn fritters with shrimp, oysters and braised pork belly with shrimp paste and white turmeric. The cocktail list features a variety of options, ranging from a mezcal-based drink to sake and Thai rum elements.

The proposed hours of operation for the spot are 12 p.m. to 2 a.m. daily.

Saesue and Suansilphong are part of the ownership behind Fish Cheeks, which launched in 2016 in NoHo. Fellow Thai restaurant Bangkok Supper Club followed later.

More recently, the team partnered with baker Melissa Weller to open Bub’s Bakery, which opened last month in NoHo.

As of now, an opening timeline for Chacha’s remains unknown.
