A stuffed bagel brand is bringing a location to Greenwich Village. Moonrise Bagels will be opening at 58 West Eighth Street this fall, according to reporting by Eater NY.
Couple Jeremy Rhodes and Ali Chetkof Rhodes began to form the brand at the end of 2020, toying with the idea of placing a pizza inside a bagel. Eventually, they created a winning recipe and the idea evolved into the first Moonrise Bagels shop in Woodstock in 2021.
Both Jeremy and Ali are native New Yorkers and previously worked in accounting and public relations, respectively, in New York City. Once they crafted their Classic Pizza Bagel, they transitioned into building Moonrise Bagels, which now has locations in Woodstock, Poughkeepsie and Kingston. The West Village location will be their first in New York City.
“When Jeremy started stuffing bagels in our Woodstock apartment during the pandemic, we never imagined this would be a business,” a recent Instagram announcement states. “We certainly didn’t imagine having three Hudson Valley locations, and never would have dreamed of opening a shop in the bagel capital of the world.”
The menu features unique concoctions like a bacon, egg and cheese stuffed bagel; a Buffalo chicken stuffed bagel; and an eggplant parm stuffed bagel. They also sell classic unstuffed bagels such as plain, sesame and everything bagels alongside classic spreads like cream cheese and scallion cream cheese.
“Bringing Moonrise Bagels to the city that made the bagel iconic feels like the biggest honor of all,” the Instagram announcement states. “From the bottom of our hearts, thank you for believing in us, supporting us and for getting stuffed with us.”
