New Vegas Steakhouse Carversteak is Opening in Midtown

Carversteak will open in April, operating on the first floor of the Civilian Hotel

A new steakhouse is coming to New York, straight from Las Vegas. First reported by Eater, Carversteak will open in Midtown, operating on the first floor of the Civilian Hotel located on 305 W 48th St. 

Carversteak NY is the latest from Carver Road Hospitality Group, joining a suite of businesses Carver Road already operates at the hotel, including Rosevale Cocktail Room on the second floor and Starchild, a rooftop lounge on the 27th floor.

The upcoming Carversteak is a transplant from Vegas, where Carversteak originally opened in 2022. Carversteak NY will offer a steak menu from executive chef Daniel Ontiveros, full of dry-aged American steaks and Japanese Wagyu steaks. The menu will also offer shareable plates and some vegan options.

Carver Road already has several projects in development in New York, including Flanker Kitchen + Sports Bar inside Pier 17. The hospitality group also owns Emmy Squared Pizza, which is opening a location in Greenwich Village.

Carversteak NY is slated to open in April 2026.
