Paperwork Suggests New Restaurant Planned by Renowned Restaurateur at 98 Rivington Street

Raymond E. Trinh, the co-owner of Sixty Three Clinton, a restaurant on the Lower East Side offering American cuisine with global influences, alongside his business partner and Michelin-starred chef Samuel Clonts, has filed plans for a new restaurant at 98 Rivington Street.

The filing was made under Cactus Wren LLC, a company established in October 2023 and registered with the New York Secretary of State.

The restaurant’s name is yet to be confirmed. Despite sharing its name with a cocktail at Sixty Three Clinton, Trinh has not responded to inquiries from What Now New York regarding whether the new full-service restaurant will be called Cactus Wren.

According to the filed paperwork, the restaurant will feature live music, with plans for a DJ. Further details about the restaurant’s concept and offerings remain limited at this stage.

Born to Vietnamese refugees, Trinh’s early exposure to hospitality began at his family’s convenience store in Arizona, leading him to pursue a career in food and hospitality,” according to Sixty Three Clinton’s website.

The restaurateur met Clonts during culinary school, and after working at The Ritz-Carlton Dove Mountain, they both eventually moved to New York City. Trinh developed a passion for front-of-house operations and beverage knowledge at Chef’s Table at Brooklyn Fare, and then worked at Akashi before joining Clonts at Bar Uchu, where they earned a Michelin star in 2017.
