PopUp Bagels has “coming soon” signage up at 20 East 16th Street in Union Square.
The local bagel chain, which founder Adam Goldberg launched as a pandemic project during 2020, currently has seven locations open in New York, including spots in Midtown East, the Upper East Side, the Upper West Side, Penn Plaza and Williamsburg.
The brand focuses on using quality ingredients to craft a simple menu consisting of hot bagels and schmears.
“PopUp Bagels started as a backyard pickup window to share a newly created bagel recipe with friends,” the website states. “Our goal is simple: to make you the best, freshest bagels. No frills, plainly perfect: crispy crust and soft crumb center, just the right size and with a perfect proportion of seeds.”
PopUp Bagels has been in expansion mode this year, bringing its “Not Famous But Known” bagels to new communities. It has a location on the way to Tribeca, set to open this year. The brand has begun to spread to other markets across the U.S., as well, with stores already open in Connecticut and Massachusetts and more on the way to markets in Florida and California.
As of now, the opening timeline for the PopUp Bagels location in Union Square has not been announced.
