Local hospitality group Renwick Hospitality is slated to open a new concept at Hotel Park Ave. in Nomad this fall. Park Rose will bring an Italian-American menu to the hotel, co-owner Gary Wallach told What Now New York.

The team drew inspiration from the rich history of the Nomad area where Hotel Park Ave. is located. They dug into the background of Rose Hill — the neighborhood that existed there prior — and used that history as a foundation for the concept.

“Rose Hill was this really cool neighborhood within this area of Park Avenue and 30th Street,” Wallach said. “If you go back in time, you’ll find that this area was once filled with one of the largest farms in New York, and it held the largest rose garden in the country at the time. We found that to be so inspiring because we want to operate with this kind of farm-fresh mentality. We love the idea of what flowers and gardens can do for food and drinks, and that was the stepping stone to what Park Rose has become.”

Park Rose’s menu, crafted by executive chef and Renwick Hospitality co-owner Carsten Johannsen, is centered around Italian-American fan-favorites with a Renwick Hospitality twist. Expect to see handmade pastas, steak, veal chops and more. Some other standouts include a Roman-style pizza with very thin crust, baked with four-day fermented pizza dough made in-house, as well as a meatball sandwich with hollowed out bread.

Wallach curated the beverage program. It will also draw on inspiration from Italian aperitivo culture, but it will place garden elements at the forefront. Expect to see multiple house-made vermouths that can be mixed with traditional cocktails for a flower-driven twist. Options will include charred grapefruit dry vermouth and pear bianco vermouth. There will also be two cocktail sections, aptly named to reflect the garden-centric atmosphere — the “perennials” will be less seasonally driven cocktails, while the “annuals” will offer seasonal flavors.

Additional beverage offerings will include local beers and an Italian-focused wine list.

Renwick Hospitality is collaborating with RDStudios on the design. Elements include what Wallach calls the “Park Rose atrium,” which will include the bar and some lounge seating. It will feature floor-to-ceiling windows, tall ceilings and a hand-drawn mural of Rose Hill Farm. Other design elements will include warm colors, greenery, rich velvets, intimate lighting, rich wood tones and art deco elements.

There will also be a wine room that will feature a 12-seat private dinner space, featuring the restaurant’s wine storage surrounded by stone and millwork.

This will be the newest installment in Renwick Hospitality’s portfolio, which includes existing concepts such as Lindens, Lulla, Altair, ART Soho Rooftop, ART Midtown Rooftop, Foxtail and The Alderman.

When Park Rose opens its doors, it will operate from 7 a.m. to 10 p.m. daily, serving breakfast, lunch, brunch and dinner. Bar concept Seed Library from the famed Mr Lyan is also on the way to Hotel Park Ave. and is expected to open later in the fall.
