The team behind Valla Table, helmed by Chuck Valla, is looking to bring a concept to the Union Square neighborhood. Varith is aiming to open at 13 East 13th Street, according to community board filings.
Like Valla Table, it appears that Varith will be a Thai restaurant offering classic Thai food in a relaxing atmosphere. The proposed menu features a variety of traditional Thai dishes, including Goong Sarong, Pad Thai, Pho Wagyu, Pad Kee Mao and Massaman curry. The extensive menu features both vegetarian and meat-driven options.
The cocktail menu will center around drinks with Thai-inspired flavors, including Kiew Wan Gin, featuring dry gin, midori, Thai basil, lemongrass and lime, and Mai Thai Tea, with rum, Thai tea, dry curacao, lime and mint.
The team is leasing a 6,500-square-foot space spread across three levels. Plans call for 16 tables that will seat 90 customers as well as one bar that will seat 16.
The proposed hours of operation are 11 a.m. to 1 a.m. daily, according to filed paperwork.
Valla Table opened in 2020 in Hell’s Kitchen. Earlier this year, What Now New York reported that the restaurant was expanding into its neighboring store space to expand the restaurant’s footprint.
