Family-owned business Brunk’s Butchery is working on a new concept at 4410 California Avenue in Norco, according to a public notice published in the Press Enterprise. The company’s operators will be opening a steakhouse, offering an elevated dining experience to enjoy its premium cuts.

Renowned for its USDA Prime, A5 Japanese Wagyu, Australian Wagyu, and grass-fed beef, the butchery partners with family-owned farms that prioritize humane animal treatment, its website pledges. It also caters to keto, paleo, and carnivore diets with all-natural, hormone- and antibiotic-free options, including free-range chicken, artisan cheeses, and specialty sausages.

A public hearing was held this week at the Norco City Council Chambers to review the Conditional Use Permit request to serve beer, wine, and spirits at the new restaurant. The result of that meeting was not yet published.

LinkedIn postings show that the company has recently started hiring efforts and will be doing open interviews. They are looking for servers, bartenders, cooks, dishwashers, bussers, and a kitchen manager.
