Build-Your-Own Pasta Bowl Chain Expanding

Pastaphony will open a shop in downtown Fullerton.

Pastaphony, a fast-casual Italian concept, is set to open a new location in Fullerton later this year, What Now OC has exclusively learned. While an exact address has not been disclosed, the team tells the publication it’s in the heart of downtown.

The business had teased more locations coming soon on Instagram, but did not specify where. Leni Benbicaco, Co-Founder and CEO, confirmed that a lease has been signed for a 1,000-square-foot street-front restaurant with a small patio. He is planning to start hiring a team in October and targeting a November opening.

Specializing in customizable pasta bowls, the eatery lets patrons make their own take on classics like Penne Arrabbiata, Fettuccine Alfredo, and Chicken Parmesan. The chain also offers side salads, garlic bread, and dessert options.

“We’re thrilled to expand Pastaphony into vibrant new markets across Southern California. With Downtown Fullerton, we’re building momentum to bring our modern take on Italian pasta bowls to even more communities,” Benbicaco said.

Concept Restaurants LLC is the parent company behind Pastaphony. It debuted at Rodeo39 Public Market in Stanton and has since expanded to Flight Mess Hall in Tustin and Glendora Public Market, a local realtor’s post shows.
