Coastal Cowboy Bringing “Refined Casual” to San Clemente

Coastal Cowboy, a new restaurant concept, is preparing to open at 214 Avenida Del Mar in the heart of San Clemente, the business tells What Now OC. It will be the latest trendy eatery to hit the town once it opens its doors later this summer.

The project is being led by Jake Fitch, a local resident and owner of Platinum X Construction, a commercial general contracting firm specializing in the hospitality field. With that business, he has over a decade of experience building more than 300 restaurants, and is ready to be on the operational side of things with this new venture.

A 2,000-square-foot space, it’s currently in its second round of city permitting, and there are active records in place with the Orange County Health Department. Fitch anticipates construction permits to be approved in the next few weeks and to have doors tentatively open on August 1.

Customers will order at the bar counter but won’t pay until the end of their meal. Fitch calls it “refined casual”, a kind of cross between a fast casual and a full sit-down space, with open-air elements and possible outdoor seating.

Fitch is teaming up with chef Jared Adams, formerly of Sapphire Grill in Laguna Beach, who will manage the kitchen and develop the menu. The restaurant will offer a modern take on American cuisine with burgers, tacos, sandwiches, wraps, and salads.
