Zama

Several health code violations were observed at this Japanese restaurant. The inspector reported issues related to cleanliness, maintenance, and regulatory compliance. The report opens with the observation of clean food equipment stored next to the mop sink. The mop sink had no splash guard.
There was chlorine chemical sanitizer residue found in the final sanitizer rinse cycle. The temperature of the sanitizing dishwasher was low at 10 ppm, instead of the required 50-100 ppm.
The facility was not following the variance procedure for parasite destruction. The sanitarian did not observe records for parasite destruction. Aluminum foil was used instead of approved shelf liners, which is not compliant with code.
The on-site inspector also noticed several areas in the facility that need repair. The chest freezer door in the basement was not in good shape. In the walk-in coolers, there were gaps between the wall panels that were not sealed.
There was an inoperable refrigerator in the basement food prep area. The ware washing area had rusted shelving. The kitchen/food prep area had damaged floor surfaces. Expansion foam near the stairwell did not have a smooth, cleanable surface.
There was also a lack of cleanliness in the facility, as reported by the inspector. There was food debris and dust in the dry pantry area’s food containers. The walls and ceilings had a buildup of grease. The walk-in coolers and freezers had grime accumulating on the seams.
Dust was accumulating in the bathroom vent. This vent was also observed not to have been properly installed. Dust and grease were accumulating on the hood filters and pipes for the fire suppression system.

Capriccio Cafe and Bar

An inspection of this cafe on July 14 found several health code violations. The on-site inspector noted some violations of cleanliness. The panini press has an accumulation of grease and debris. There was also grease on the wall next to the panini press.
In the toilet room, residue was found on the wall under the hand dryer. There was also static dust observed on the vent cover on the ceiling. The dining area had cracked floor tiles.
There was debris along the floor pedometer of the rear prep and serving areas. There was static dust on the keys hanging from the ceiling of the rear prep area.
