Cheng Du received 4 risk factor violations during its inspection. Inspectors found improper temperature control of several items with various proteins and cut tomatoes held between 54-55 degrees F instead of the required 41 degrees F or below.

The inspection report revealed raw animal foods including fish, meats, and eggs were improperly stored above ready-to-eat foods in the walk-in cooler. The facility lacked proper date marking on potentially hazardous foods held for more than 48 hours.

Additional violations included missing temperature measuring devices in refrigeration equipment, unlabeled bulk food containers, and an insect control device improperly placed in the basement handwashing area.

Storage violations included beverages and food items stored less than 6 inches above floor level. There were also contamination concerns in food preparation areas where moist wiping cloths were not properly stored and the utensils lacked adequate protection.
