The Philadelphia Department of Health noted several issues at the cafe, including three risk factor/intervention violations. The on-site inspector documented all issues in its detailed inspection report for Red Hook Coffee and Tea.
Raw eggs were stored on an upper shelf above ready-to-eat food. Inspectors also noted residue inside the ice machine bin.
Preparation of potentially hazardous ready-to-eat items like potato salad was held for more than 48 hours, lacked correct date marking while in storage.
Labels were also missing on working bulk food ingredient storage containers at Red Hook Coffee and Tea, the report states.
According to the report, the on-site inspector observed mouse activity in the Philadelphia facility. Employees were not wearing required hair restraints, including hats, nets, or beard covers.
No prep sink was available to properly wash fruits and vegetables at Red Hook Coffee and Tea. The on-site inspector observed that dishes and containers at the Philadelphia facility were not inverted properly. As per the report, cutting boards with scratches were seen as well.
Raw wood stairs that were rough and not easily cleanable led to the basement at Red Hook Coffee and Tea.
The handwashing sink, three basin sink, and garbage grinder sink in the Philadelphia Cafe’s food prep area were not sealed properly to the wall. A non-ANSI shelving was observed over the three-basin sink, the report mentions.
The inspection report further highlights that oil, dust, and debris were observed on Red Hook Coffee and Tea’s walls behind the cook plate. Ice build-up in multiple chest freezers, rust around refrigeration units’ shelves, and food debris were also mentioned in the report. A leakage was seen at the faucet on the Philadelphia cafe’s handwashing sink and garbage grinder sink.
The report focuses on dirty cooking conditions at Red Hook Coffee and Tea through its many other noted violations. Heavy static dust accumulation on ceiling vents, debris on the basement floor, and mouse droppings on food prep floors are some examples.
Unsealed holes in the ware wash room’s ceiling, missing bricks on the way to the basement, floor damage, missing base covers, and more issues were added in the report. A lack of mechanical ventilation for cooking raw proteins was emphasized.

Based on the violations, the Philadelphia Department of Health recommended corrective measures. Red Hook Coffee and Tea must address these issues before reinspection.
