The inspector instructed staff to provide soap at the first-floor sink. During the inspection, staff corrected storage practices for raw chicken and eggs. The report mentioned six risk factor/ intervention violations at the premises.
Ice was found uncovered, but staff corrected the issue during the visit. The inside of the soda gun holsters had an accumulation of mold and pink slime. The ice machine bin revealed traces of black residue and pink slime. Contaminated ice was discarded, and the bin was sanitized.
The quaternary ammonium concentration in the sanitizing solution was noted at 100 ppm instead of the recommended 200 ppm. The holding temperature of chicken, spring mix, and cut tomatoes was observed at 45-50 degrees F instead of the required 41 degrees F or lower.
Containers were overcrowded in the prep unit, restricting air flow. Inspectors were unable to access temperature monitoring tools. The prep and bar area showed evidence of drain fly activity.
The inspector found issues with maintenance at the venue. The staff was using plastic crates for elevation. The place had a non-functional refrigerator installed in the basement prep area. The establishment had unclean faucet fixtures and catch drains with accumulated residue.
The cooking and refrigeration equipment in the kitchen area showed residue. One sink was leaking and showed signs of poor upkeep. Debris had built up in the storage area and beneath bar equipment. The complete health inspection report is accessible to the public.
