Inspectors noted that the person in charge (PIC) did not demonstrate adequate knowledge of sanitation and hand-washing requirements. During the inspection, officials found that potentially hazardous ready-to-eat food was not correctly labeled with dates in the restaurant’s refrigerator.
Food ingredients stored in containers at the premises were not labeled clearly with their common names at the time of inspection. Officials also observed signs of insects and flies in the food preparation area.
They also found mouse droppings in the dry storage room. A bin with fish was not elevated six inches above the ground level. The facility was observed using soda crates in the rear storage area for elevation.
The cutting boards in the facility were poorly maintained and required thorough sanitization. The warewash machine in the venue reflected the reading of water at 90°F rather than the required 120°F.
Additionally, there were no sanitizer test strips at the facility to check the strength of the chlorine used for cleaning. The staff restroom was observed to be in poor maintenance. The rear storage area revealed a damaged ceiling and wall.
The wall of the prep area had accumulated grease and oil. The facility should address the gaps between the exit door and the wall. Hood filters also showed accumulated dust and grease. The inspection report for Mayura Indian Restaurant was posted online for viewing.
