Health inspectors spotted several health code violations at Dock Street Brewery on Thursday. The report documents the inspectors’ observations during this inspection. Among the observations, the absence of a person with a Food Establishment Personnel Food Safety Certificate was noted.

The report then notes that uncovered food was found in the walk-in cooler. The fan guards and fan housing inside were covered in dust, while the uncovered food lay there. The slicer that had not been used on the inspection day had food debris on it. There was food residue accumulating on the can opener.

The brewery’s storage area had unpackaged disposable plates and an open box of foil with debris on it. Plates in the food prep area and containers in the bar cabinet were not stored upside down. There was debris on the walk-in cooler’s floor perimeter. The catch-basin below the food prep sink, the mop sink floor, and the ventilation cover were soiled.

There was black residue on the door gaskets of the rear walk-in cooler. Inspectors noticed additional residue in the under-the-counter refrigerators in the bar area, on the packaging tape found on the interior of this refrigerator, and in the bar area’s wooden cabinets.

The chlorine chemical sanitizer residual in the final sanitizer rinse cycle of a dishwasher was at 0 to 10 ppm. It is required to be between 50 and 100 ppm. The quaternary test strips had expired. There was a spray bottle in the bar area’s cabinet without a label, which was not recognizable by the bar employee.

An employee was drying wet glasses removed from the bar area’s dish machine. The ice machines in the bar area and the walk-in cooler were inoperable. The walk-in cooler door on the brewery side has a damaged gasket. The walk-in cooler floor was not sealed well.

The brewery’s rear door had a gap, and the garage doors were open. It could have been the cause of the pest infestation in the facility. Live and dead cockroaches were observed in several locations.

Live roaches were on the floor and walls in the brewery mill room near the grain machine. Live flies were in the brewery, the rear dry storage area, and the food prep area. Dead cockroaches were on the floor behind the oven in the food prep area and on the floor beneath the brewery tank.

Los Gallos

A routine inspection of Los Gallos Restaurant and Taqueria documented several health code violations. The report begins with the observation of an empty paper towel dispenser at the handwash sink in the kitchen. An employee was using the handwashing sink at the point-of-sale area to wash utensils.

The reach-in and walk-in refrigerators had raw animal foods above the ready-to-eat foods. Food in the walk-in cooler was stored directly on the floor instead of the required 6 inches above it. There was dust and debris collecting in the basement. Grease and food debris were accumulating under and behind the cooking equipment.

The cellar door was open during the inspection. It could be the reason for the insect activity in the facility. Physical evidence of insect activity was observed in the kitchen and the basement storage area.

There was a bagged rodent bait on the floor of the basement storage area. An insect control device was also located there, which could potentially contaminate food, equipment, and utensils.

There was ice accumulating inside the chest freezers. There was no backflow prevention device on the main water supply line in the basement. The garbage grinder was not operational during the inspection.

The combination handwash/garbage grinder in the food prep area was not properly sealed to the wall. Cardboard and aluminium foil were used in lining shelves in the basement storage area and tables in the kitchen.

Finally, the 3-bay ware wash sink’s quaternary ammonium concentration was at 0 ppm. It is supposed to be at 200 to 400 ppm as stated in the manufacturer’s use directions.
