An exciting summer is in store for Orwigsburg foodies who appreciate great service and an exciting menu. Buns on the Go LLC, one of the Lehigh Valley’s most beloved and diverse food trucks, is opening its first brick and mortar location later this year, reports WFMZ.

Owner Anthony Vassallo and his partners Neveen Vassallo and Luis Torres are setting up shop at 1070 Centre Turnpike in West Brunswick Township. Neveen tells What Now Philadelphia that they discovered the area during a food truck competition-an event that would see them both claiming some hardware and finding a new home. “We were up there doing a food truck war and we won second place” she explains, adding “…it just kind of fell into our laps. I don’t think we chose the location, the location chose us.”

The new storefront will allow Buns on the Go LLC to employ a unique model that incorporates the food truck. Neveen states: “Our food truck is still going to be up there-that is going to be our kitchen. What we are trying to do is have an atmosphere where people can have indoor seating and eventually outdoor as well. They can enjoy their food instead of just grabbing and going. We want to create a comfortable seating environment.”

Buns on the Go LLC has earned a dedicated fan-base through its delicious, freshly made empanadas. The cuisine is truly a labor of love, with the team rising early to make the empanadas every morning. Neveen assures existing customers that the dishes they love aren’t going anywhere, though some new favorites may be on the way.

“Our main menu is always going to stay the same but I will have specials, maybe once a week or depending on how we feel.” she says. “I will be adding things for sure….I might start adding hot dog empanadas, pepperoni empanadas. I might add more dishes from our different cultural varieties, like some Middle Eastern, some Italian, some Spanish. There’s a lot of things brewing in our mind.”

Future regulars won’t have to wait much longer to sink their teeth into Buns on the Go LLC’s innovative fare. The eatery will be holding a soft opening on Father’s Day weekend (June 12-15), with the grand opening soon to follow.

West Brunswick foodies should mark their calendars for June 21, when the restaurant will be offering complimentary food and fun. Neveen states: “Our grand opening is June 21 from 11 am to 4 pm. We are having free hot dogs from 11 am to 1 pm, facepainting from 12-2 pm, and my sister will be selling home-made desserts.”

Neveen adds that her sister’s desserts are a sweet and delectable feature that visitors can expect regularly at Buns on the Go LLC.

The Vassallos still have events scheduled throughout the summer, making the brick and mortar’s precise hours a bit elusive.  Follow Buns on the Go LLC’s Facebook page for regular updates concerning opening hours.
