Carbon Copy to Expand With New South Philadelphia Bar

The new spot will feature beers, wines, ciders, cocktails and space for community events.

Philadelphia brewery and winery Carbon Copy, founded by Brendon Boudwin and Kyle Wolak, is opening a new location in South Philadelphia at 613 S. 7th St.

“Philadelphia is such a neighborhood-centric place,” Boudwin told What Now Philadelphia. “A couple of summers ago, we had a pop-up tasting room in South Philly. The reception was great. We talked to a lot of people who were frequent visitors of that spot. They were asking us when we were coming back down that way, so we decided to look into that area. It’s a good way to spread ourselves across the city.”

While the original location leans more toward dining, the new South Philadelphia spot will emphasize its bar offerings and serve as a space for community events.

“The new spot has no kitchen, so we’ll have small snacks and we’re working on a smaller food menu,” he said. “There’s so many great spots right in that area. A lot of them do take out. It’ll allow people to bring in food. It’ll be a little bit of a different experience.”

Carbon Copy brews its own beers in West Philadelphia and produces both red and white wines at its external Kensington winery, all of which will be featured at the new location. The spot will also expand its wine selection with offerings from other Philadelphia and Pennsylvania producers, alongside ciders and a curated cocktail program.

The new location will seat 40 guests and, with its bar-focused design, will also feature standing room and high-top tables.

“I’m really excited that this will be more bar-focused; having a place where people can come in and either spend their night there, pop in before they have a reservation, or come for a drink afterward. It seems like people are really interested in different experiences now too,” Boudwin said.

The name Carbon Copy also reflects the distinctive vibe the duo aims to create.

“We always say it’s a constant reminder to do things our own way–don’t just go out and copy what everybody else is doing, especially in the beer world. We’re just doing things the way we want to do them,” he said.
