David Chang’s Fuku will open in downtown Wilmington’s Hercules Plaza, located at 1313 North Market Street Wilmington, DE 19801.
Chef Akhtar Nawab — founder of Hospitality HQ — is behind the project that will kickstart the redevelopment of 1313 N. Market and 1201 N. Market.
David Chang conceptualized Fuku to “change the way people think about fast casual.” The Fuku website describes its mission as follows: “Fuku, as a concept, was built off of this really delicious thigh-meat spicy fried chicken sandwich and has since grown to serve a variety of fried chicken offerings, sides, and slushies. guided by many of the same principles that David Chang instills in all his restaurants, Fuku is focused on offering guests approachable, tasty food that draws from both Asian and American influences.”
Fuku’s specialty sando includes a crispy Habanero-brined chicken breast, Fuku mayo, and a pickle all atop a Martin’s Potato Roll. You can also make it a meal with “sweet jalapeño seasoned waffle fries, a side of pickles, two Fuku sauces, and a drink.”
Chancery Market Food Hall & Bar will be the second food hall to debut on Market Street, with the DE.CO food hall — located in the DuPont-Building on Rodney Square — preceding its arrival.
“We’re thrilled to bring such an exciting new array of dining offerings and culinary experiences to the Wilmington community,” Nawab told Delaware News. “Our goal is for our kitchens to serve as a springboard for talented, local vendors looking to take their businesses to the next level and to create a thriving communal space where visitors feel welcome.”
The venue will include an indoor/outdoor bar, seating for 233 people, and shared & private dining space. Fuku will be accompanied by a vegan fast-casual concept called Rooted AF and an Indian restaurant called KatiRoll Wala.
