A new dining concept is headed to Hard Rock Hotel & Casino Atlantic City as the property launches a $50 million capital improvement project slated for 2026, according to a press release.
Overlooking the boardwalk in an upscale setting, Sitar will debut as an East Indian restaurant, showcasing modern Indian cuisine inspired by diverse cultural influences and regional flavors.
The menu will feature starters such as Bombay Billionaire Crab Toast and Maharaja’s Gold Leaf Samosa. Main courses will include Mughal Empress Butter Chicken, Black Card Wagyu Rogan Josh, Goan Lobster Thermidor Masala, Nizam’s Short Rib Nihari, Malabar Seabass Pearl Curry, and Truffle Dal Makhanu Reserve.
Rounding out the menu, Sitar will offer desserts like a chai old-fashioned affogato, a gulab sphere and a dark chocolate masala soufflé.
An official opening date has not been announced. Once open, Sitar will be open Wednesday–Thursday from 5 to 10 p.m., Friday from 5 to 11 p.m., Saturday from 4 to 11:30 p.m., and Sunday from 4 to 9:30 p.m.
The bar and lounge will be open Wednesday–Thursday from 5 to 11 p.m., Friday–Saturday from 4 p.m. to 12:30 a.m., and Sunday from 4 to 10 p.m.
In addition to the new fine-dining concept, the improvement plan will renovate 700 standard guest rooms, more than 60 suites and eight penthouses in the hotel’s North Tower, while also updating walkways and corridors. Exterior renovations on the South Tower are already under way.
The team will also install new carpet on the casino floor and second-floor corridors, and 16 electric vehicle charging stations will be added at Rocktane Gas and Wash.
