Chef and owner Brad Daniels is in the process of opening his new restaurant Tresini at 504 N. Bethlehem Pike in the Lower Gwynedd Township on the site of the former Ristorante San Marco. Tresini is a faux Italian word made up of the word tre or three and asini which means donkeys per The Philadelphia Inquirer. It’s a bit of a joke about trying to open a restaurant during the ongoing pandemic.
Brad Daniels is a graduate of The Culinary Institute of America (CIA) and has worked as a chef de cuisine for Chef Mark Vetri’s Osteria after working his way up from being a line cook at the restaurant. He hails from South Jersey.
Tresini’s website describes the restaurant’s concept as “Tresini offers Italian influenced cuisine from regionally sourced ingredients. More “rustically refined” than fine dining, we create imaginative exclusive dishes alongside modernized interpretations of classic recipes. The result balances familiar comfort food and completely new tasting experiences. Our convivial dining atmosphere encourages guests to appreciate the moment with family and friends.”
Chef Daniels took over the site back in November and has been working on the restaurant ever since. A hiring notice for staff has been up since February and in late April, the Instagram said that staff training was taking place so we assume that they might be entering the home stretch, but officially there is still no word on an opening date.
The Tresini Instagram has given everyone a preview of some of the dishes that might be on the menu: there was a potato and cheese agnolotti, winter citrus Insalata with fennel and celery, dry-aged duck with Amaro Agro Dolce, grilled Frutti di mare or fruit of the sea, and a tempting dessert, olive oil krimpets.
