Aubergine Kitchen is adding two more restaurants in Arizona, with locations planned for Phoenix and Queen Creek. The company recently confirmed both cities on Instagram, but has not announced opening dates.
The Phoenix restaurant will open at Desert Ridge, 21001 N. Tatum Blvd. A Queen Creek restaurant is also in the works at Queen Creek Marketplace, 21398 S. Ellsworth Loop Road. That location will be part of new construction across from Barrio Queen.
The expansion gives Aubergine Kitchen a larger presence in Arizona, where it already operates a restaurant at 1939 S. Val Vista Drive in Mesa. The company currently has 13 open locations across Arizona, Utah, Nevada, and Idaho.
Aubergine Kitchen’s menu includes bowls, salads, plates, smoothies, açai, and breakfast items. The restaurant prepares its food from scratch and does not use seed oils or added sugar. Gluten-free and plant-based options are also available.
Elcio and Mirian Zanatta founded Aubergine Kitchen twelve years ago when they moved from Brazil to the United States. They were looking for the kind of food their family had been used to eating at home and decided to make it themselves.
