Gadzooks, a restaurant focused on “redefining the enchilada,” is among the growing list of tenants heading for the Epicenter at Agritopia at 3150 E Ray Road in Gilbert.
The restaurant, owned by brothers Aaron and Jared Pool, originally started as a college business plan back in 2013. According to the directory listing on the Epicenter page, Aaron knew he wanted something created around enchiladas.
His roommate at the time liked the name “Gadzooks Enchiladas and Soup” because of how it rolled off the tongue. Although Pool didn’t like the name at first, it ultimately stuck with him.
In 2015, brother Jared decided to sell his San Francisco dental practice and join his brother on his venture, bringing Gadzooks into Arcadia, Tempe and Chandler before their forthcoming location in Gilbert.
The brothers are also busy working on two new concepts, Poolboy and The Green Woodpecker, which are slated to open in the spring of 2022.
What Now Phoenix reached out to Jared Pool on Friday for more information on the opening date, but he was unavailable by phone. As of now, Gadzooks is slated with the rest of the tenants at the Epicenter to have the opening dates announced by Winter 2021.
