We already know there are quite a few dining options to look forward to at Gilbert’s Epicenter at Agritopia. Some of the Valley’s most popular restaurants including Buck & Rider, Gadzooks, and Spinato’s Pizzeria are all headed for this new town center, but one completely original concept is also set to debut there this fall.
Source is going to be a quick-service Mediterranean restaurant. The 2,000-square foot space will have counter service and a menu that focuses on the roots and origins of its ingredients, headed by chef Claudio Urciuoli, whose work you might recognize from Pa’La in downtown Phoenix and Arcadia.
There will be sandwiches, salads, pizza, small plates, and wood-fired dishes using high-quality ingredients such as artisan bread and products sourced from producers who are close to Urciuoli. “I’m able to have my business because of a great connection with people who do farming, fishing… and that’s what’s most important to me. That’s why we created Source, to recognize the people who work very hard,” he recently told Phoenix New Times.
