Cinnabon’s new concept shop is coming to several cities including Hillsboro and has the potential to turn into a popular dessert spot.
Cinnabon announced on April 8, 2025, that their new Cinnabon Swirl shop is coming to 3595 SE Cornelius Pass Road. It is expected to open in May. There will be more locations down the line in Peoria, Arizona, Kennesaw, Georgia, and Pasadena, California.
The Hillsboro store will be considered the flagship location, and it will feature two limited-edition soft serve flavors each month, the first two being Birthday Cake and Cold Brew. The concept is a combination of Cinnabon and Carvel ice cream to create new signature desserts that incorporate the best of both brands.
Cinnabon is owned by the Atlanta-based company GoTo Foods, which also manages Carvel, Auntie Anne’s, Cinnabon itself, Jamba, McAlister’s Deli, Moe’s Southwest Grill and Schlotzsky’s.
“The company is able to propel the success of our current portfolio of brands while also being able to instantly provide new concepts like Cinnabon Swirl,” GoTo Foods CEO Jim Holthouser said in a statement.
Some of their “classic menu items” will be the Bonini, a Cinnabon roll with vanilla soft serve ice cream, the Cinnabon Swirl Sundae which combines a class roll with vanilla soft serve and caramel drizzle, an Ice Cream Sandwich with chocolate chip cookies and Premium Pints, which has soft serve swirled together with various toppings.
