Rubato Wines is opening a new space at 109 SE Salmon St, Suite B1, in Portland’s Central Eastside, according to owner Jeffrey Wilson, who confirmed the move to What Now Portland. Wilson said the plan is likely a tasting room, though he was not able to share further details on the concept, timeline, or what customers can expect at the new address.
Wilson is a familiar name in Portland’s wine scene. He is also the owner behind Daydream, the SE Clinton Street wine bar and lounge that What Now first covered back in 2024 when it opened in the former Bar Norman space. Daydream built its identity around pairing natural wine with a strong music program, complete with a custom sound system and DJ booth, and has become a fixture for Portland’s wine and vinyl crowd since opening. Wilson also runs the record label Eulipion Arts, tying his music and wine ventures together.
Rubato itself has built a name as both a wine label and a roaming presence at Portland tastings, regularly pouring alongside other local winemakers at events with Division Winemaking Co and appearing at wine festivals like The Wild Bunch. The brand describes its approach as wine meant for feeling rather than simply drinking, leaning into a playful, sensory-driven identity that mirrors the vibe Wilson has built at Daydream.
The Central Eastside sits close to the Eastbank Esplanade and OMSI, an industrial stretch that has increasingly drawn wine bars, breweries and small production spaces in recent years.
