The inspectors observed major violations at the food facility on Friday. Upon arrival, a pan of big beef dumplings was observed on the counter by the front register. The food item, which was prepared at 8:00 a.m. according to the operator at the facility, was measured at 80°F.
The big beef dumplings were kept at room temperature for more than 4 hours and were considered unfit for human consumption. The improper food handling and incorrect holding temperature confirmed the violation of the California Health and Safety Code. The item was voluntarily discarded in a trash can, correcting the violation on-site.
The inspection report revealed a minor violation related to food storage temperature in the refrigerator. Shredded cheese was maintained at 48F inside the 3-door upright refrigerator as opposed to the approved 41F or below.
The facility failed to maintain the cleanliness of the meat cutter machine. The inspectors educated the staff on practicing cleanliness of food contact surfaces, utensils, and equipment, ensuring surfaces are clean and sanitary.
Another major violation involved the employee washing the wok spatula and kabob skewer but not sanitizing. the violation was corrected during the inspection, and proper warewash stickers and guidance were provided during the inspection.
The restaurant was also observed storing potentially hazardous food incorrectly in the refrigerator. A storage guidance sticker was provided to staff. A bag of potatoes was found on the floor by the back door and was was placed in proper storage immediately. Food items are required to be stored at least six inches above the floor and avoid exposure to contamination such as vermin and dust.
Other observations included missing labels on dry prepackaged food items, lacking chlorine sanitizer test strips, trays stored on the faucet of the prep sink and 3-compartment sink, and lacking probe thermometer.
The report also identified employees storing personal items incorrectly. The facility should advise employees to keep personal items in designated areas only. Missing handwash signs in the restroom should be posted on the same day of inspection.
Follow-up Inspection
The restaurant’s receipt of the yellow card requires conducting a reinspection within 24-72 hours. The facility should correct all major violations to receive a green placard. A reinspection fee may apply and may be assessed as authorized by the current Sacramento County code.
