Chang’s Chinese Cuisine underwent a routine health inspection on April 1 by the Sacramento County Environmental Management Department. The restaurant was cited for multiple health code violations and temporarily closed.

Chang’s Chinese Cuisine chain serves creative takes on Chinese fare. According to the report, the violations were:
- Raw chicken was prepared on an unclean prep surface and came into contact with oil containers, a sponge, and visible residue. One pound of chicken was voluntarily discarded.
- Cutting boards and knives were found unclean near the prep area. Staff were instructed to properly wash, rinse, sanitize, and air-dry all food-contact equipment immediately.
- Significant rodent activity was found throughout the facility, including over 100 droppings in a non-functional walk-in refrigerator and multiple droppings across the kitchen, storage, and dining areas.
- Food items in the walk-in freezer were stored in a disorganized manner. Staff were instructed on proper storage hierarchy. The use of non-food-grade plastic bags for storage was discontinued, according to the report.

- Buckets of raw chicken were observed stored directly on the floor in the walk-in freezer.
- Significant food debris buildup was found beneath cooking equipment, storage shelves, refrigerators, and inside the walk-in freezer.
- The inspection noted unclean ventilation hood filters.
- Multiple gaps and holes were identified throughout the facility, including around doors, walls, ceilings, and plumbing fixtures.

Follow-up Inspection

According to the report, the restaurant’s health permit was temporarily suspended. The eatery can request a reinspection once it undergoes professional pest control and fixes all the violations mentioned in the report.
