A banner for Holaloha Fusion Restaurant & Bar has been hung at the Folsom Village. The new Mexican-Hawaiian fusion restaurant is planned to replace Canyon Grill and Alehouse space at 9580 Oak Avenue Parkway, Suite 8. The restaurant is anticipated to be fully open to the public next week, on February 17.

Chef Alyssa Caballero will partner up with Canyon Grill owner Joe Garnica to present a menu inspired by her Hispanic background and time spent with family on the Big Island. Caballero spent the past few years as executive chef of The Hive in Woodland. She also ran a catering business called Las Damas Locas based in Sacramento.

The full-service restaurant will serve items such as island chicken taco, birria mofongo, and a loco moco burrito with egg fried rice, beef patty, and brown gravy. There will be a full bar and craft cocktail offerings. Holaloha also plans to offer brunches on the weekends with mimosas and michelada flights.

The new restaurant will adapt the existing Canyon Grill space, including the 3,500-square-foot restaurant space and its 7,000-square-foot outdoor patio, which will host outdoor live performances as long as the weather permits. According to Garnica, the new restaurant will open on Wednesdays and Thursdays from 11 a.m. to 8 p.m., Fridays from 11 a.m. to 10 p.m., Saturdays from 10 a.m. to 10 p.m. and Sundays from 10 a.m. to 6 p.m.
