Highland Noodles to Bring Hand-Pulled Noodles and Dim Sum to Roseville

This will be the fourth location for the Milpitas-based Chinese eatery.

A hand-pulled noodle and dim sum chain is expanding to Roseville.

Highland Noodles is set to open its fourth location at 1132 Galleria Blvd, Suite 100, inside the Ridge at Creekside urban strip mall, according to the Sacramento Business Journal. The space was formerly home to Jayna Gyro.

To launch the new outpost, Highland Noodles is partnering with local operator Linfei Zhuang, who also co-owns several Asian-inspired restaurants in the area, including Uncle Dumpling in Roseville and Aji Sushi in Foothill Farms.

The menu at Highland Noodles highlights traditional hand-pulled and knife-cut noodle dishes, such as beef noodle soup, Lanzhou-style beef noodles, and spicy braised chicken with flat noodles. Guests can also look forward to a range of handmade dim sum—from dumplings and wontons to pork buns and pancake rolls—plus rice bowls, skewers, soups, and other popular Chinese dishes.

“Expect chewy, freshly made noodles, generous portions, and bold layered flavors—perfect for a casual lunch or dinner with friends, especially for those who love a good spicy kick,” Zhuang told What Now Sacramento. “Famous for its hand-pulled noodles, rice broths, and spicy, aromatic sauces, this restaurant is a must-visit for anyone craving hearty, traditional regional Chinese cuisine.”

The chain debuted in Milpitas in 2016, expanded to Frisco, Texas in 2021, and opened a third location called Noodle Dynasty in Portland, Oregon last year. Zhuang plans to open Highland Noodles Roseville in mid-July 2025.

Jayna Gyro, which debuted in Roseville in January 2024, permanently closed in April. The casual Mediterranean concept continues to operate locations in East Sacramento and Emeryville.
